I love cooking. Just about everything I make is awesome, if I do says o myself ;)
Lately my thing is putting roasted red peppers and roasted garlic in everything. My cookie sheets are a mess because of this, but it’s so good! I’ve been sauteeing some eggplant on the stove with big chunks of onion, adding a can of white beans and a can of whole tomatoes (I squish them, of course), seasoning with salt, pepper, lemon juice and red wine and then cooking it down for a while. At the end I add my roasted pepper and garlic and throw some greens in the pot to wilt. I’ve been having this like 3x a week. I get addicted to certain foods for a while and this kind of meal is like a good bridge between winter and spring.posted over 2 years ago

some of my favorites are really simple…
one, put noodles, greens of your choice, cherry tomatoes, just enough water for the noodles to absorb, and pesto mix into a microwaveable cookwear dish, and microwaving in increments of five minutes until noodles are done and tomatoes popped.
another is just to bake some chicken and lay it over pasta and pesto with a white sauce.
and of course the ramen variations… beef ramen, cooked, then put your noodles in a bowl and keep the broth in the pot. take a few slices of thin cut round steak and swish them in the broth until cooked :) serve!
and as far as deserts go, i’m a desert freak, there’s no way I could list them all on here lol
